Who Needs Cheesy Pizza Or A Burger When You Can Have Asian Noodles Galore?
I had a late start this morning; I left for the markets about 11:00am. That meant I returned home at 2;20pm starving! I wanted a delicious, satiating and fresh late lunch. I came up with these noodles with everything included and it tasted good enough to make me wiggle and dance in my chair! It took no time to make ; I sat down to eat at 3:00pm and i devoured the whole bowl by 3:15pm!
Asian Noodles Galore
Ingredients
45 grams organic potato & bean thread noodles
1/4 large carrot, julienned
slice of daikon, julienned
1/2 cucumber, julienned
pinch of sea salt
5-7 edible podded peas, trimmed and thinly sliced
2 slices of red onion, finely chopped
1 shallot, trimmed and thinly sliced
1/4 red pepper, trimmed, seeds removed, sliced and chopped
1/2 avocado, chopped
handful of fresh cilantro, finely chopped
3-4 medium sized raw prawns, peeled and cleaned
For the sauce:
juice of 1 lime
2 tbs Redboat fish sauce
1 tbs raw honey
1/4 tsp dried garlic powder
1/4 tsp shrimp paste (shrimp + salt only)
1/4 tsp homemade sriracha (or 1 fresh chili finely chopped) optional
1/4 tsp toasted sesame seed oil
Method
Place the noodles in a bowl, bring a kettle to boil and pour over the noodles. Let them sit for at least 5 minutes.
With a mandolin, using the smaller blade, julienne the carrot and daikon and put in a small bowl. Julienne the cucumber with the larger blade and add to the bowl with a pinch of salt. Set aside.
Juice a lime and add the fish sauce, honey, shrimp paste, sesame oil, sriracha, garlic powder and mix thoroughly making sure the shrimp paste and honey are fully dissolved. Set aside.
Chop the onion, shallots, edible podded peas, cilantro, red pepper, avocado and add to the noodle bowl.
Heat a small skillet to a medium heat and cook the washed prawns for 1 minute on each side. Remove from the heat and put aside.
Drain the noodles and rinse in cold water.
Add the julienned vegetables and noodles to the bowl and pour the sauce over tossing the salad thoroughly. Place the cooked prawns on top and serve!
This makes 1 bowl of heaven!
