Butter Leaf Guacamole Wraps On A Humid Summer Day

Today is simply too muggy and warm to turn on the oven!

On the first Wednesday of the month, my local health food store offers 20% off everything; this morning, I walked there taking a detour by the beach while the rain came and went and the humidity made its presence felt.

On my way home, I stopped in at a fruit and vegetable market to buy an avocado and onion to tie me over until Saturday when my beloved farmers’ market reopens for the new year. I walked out with two avocados, a red onion and a head of butter leaf lettuce I simply could not resist!

When I got home, I made lunch and demolished a bowl of Korean-Style Cold Noodles. In an hour or two, I felt peckish. I amaze myself at how much I can eat!! Thinking about those lush lettuce leaves, I made Butter Leaf Guacamole Wraps. So simple to make and packed with flavour!

Butter Leaf Guacamole Wraps

Ingredients

1 avocado, flesh removed

3 slices of red onion, chopped

2 cloves of garlic, peeled and crushed

juice of 1/2 lime

1 Thai red chili (optional)

Handful of washed, spun and air dried fresh cilantro, finely chopped

1 large ripe organic tomato, sliced and chopped

2-3 pinches of Himalayan sea salt

freshly ground pepper to taste

4 large leaves of butter leaf lettuce, washed and spun

Method

Take 4 leaves of butter leaf lettuce and wash them in cold water, spin and lay them out to dry.

Scoop out the flesh of the avocado and mash with a fork. Juice half a lime and add it to the avocado. Finely chop the red onion, chile and cilantro. Peel and crush the garlic. Slice the tomato and chop it in to small pieces. Add everything to the avocado and mix together with a few pinches of salt and a twist of ground pepper. Taste and make any necessary adjustments.

On a plate, lay out the lettuce and place several spoonfuls of guacamole in the centre. Wrap the leaf around and eat right away!

It is messy, delicious and absolute heaven!
