Out All Day Or At Work? Try Potato Salad For Your Packed Lunch!
When I go out all day, I think carefully about food. I do not want to be tempted by junk food while I am out or stuck somewhere feeling really hungry.. I think and plan ahead. Over the years I have learned how much food I need to have and what travels well and what does not!
Today I packed up the salad pictured in an airtight container and brought a peach as an additional snack. I felt so satiated after eating the salad at lunch, I did not want anything else to eat until I got home at 7:00 pm!
It is so simple and quick to prepare. Just vegetables. Steamed potatoes, julienned carrot, finely chopped red onion, red pepper and cucumber with sliced edible podded peas. That’s it. The potatoes add substance and comfort, the carrot, red pepper and edible podded peas a variety of sweetness, the cucumber juicy crunch. Dress it with a pinch of salt & pepper or a sauce. This simple salad packs easily and lasts through the day without refrigeration. Perfect for picnics, work lunch, meals when out and about, it provides plenty of fuel for hours! Add a couple of pieces of fresh fruit just in case and you’ll be set for the entire day!
