Sometimes The Best Dinner Is A Leafy Green Salad Packed With Vegetables!
Yesterday at the farmer’s market, I bought a bag of beautiful, organic mixed lettuce leaves. Tonight I threw together a salad for dinner with everything I had on hand. There is nothing like a fresh salad. It tastes great and feels so good in my body afterwards! Leafy greens are one of the treasures of this earth!
Leafy Green Salad With Vegetables
Ingredients
salad
a large handful of organic mixed leafy greens, washed, spun and chopped
a small handful of mint leaves, chopped
a small handful of coriander leaves, chopped
1/4 small red onion, julienned or chopped
1/2 carrot, jullienned
1/2 cucumber, julienned
1/4 red capsicum, chopped
1/4 yellow pepper, chopped
1 tomato, chopped
1 avocado, chopped
other add ins that are delicious; radish, celery, edible podded peas, mushrooms, cabbage, scallions, parsley, basil, …
dressing
juice of 1 lemon
cold pressed, extra virgin olive oil, same amount as lemon juice
1-2 cloves garlic, peeled and crushed
1 tbs homemade mustard, (for recipe, see blog dated 22 January 2022)
1/4 tsp Himalayan pink salt
freshly ground pepper
Method
Prepare vegetables, chop, julienne and combine. Squeeze a lemon. Add the lemon juice and olive oil to a jar along with the crushed garlic, mustard, salt and pepper; shake to combine the ingredients. Serve salad and top with dressing.
