A Wonderful Way To Enjoy Tomatoes Is To Make Bruschetta!

The other day, I made my grain-free bread . With a plate of ripe tomatoes on the counter, the obvious choice for lunch today was a re-imagined bruschetta using fresh coriander rather than basil. Delicious!

Re-imagined Bruschetta

Ingredients

2 slices grain-free bread (for recipe, see blog dated 8 January 2022)

2-3 organic, ripe tomatoes, chopped

1 clove garlic, crushed

1 red chilli, finely chopped (optional)

handful of fresh cilantro

1 small scallion, thinly slices

dash of extra virgin olive oil

slat and pepper to taste

Method

Slice and chop tomatoes into small pieces. Cut the stem and finely chop a red chilli pepper. Peel and crush a garlic clove. Finely chop the coriander and scallion. Combine everything in a bowl with the salt, pepper and olive oil and set aside to marinate.

In a toaster or under a grill, toast two slices of grain-free bread.

Place the toasted bread on a plate and adorn with copious amounts of chopped tomatoes.

Serve and eat immediately!
