Today was not a cooking day; some days I am not in the least bit interested. Following a swim at the beach, I walked home weighing out my options for dinner. By the time I arrived, I settled on potatoes and spinach as my key ingredients. Rain began to spit and sputter as I opened my front door.
I usually eat steamed or baked potatoes but I felt like something rich and satisfying; i remembered my mother’s mashed potatoes. She mothered them in butter, cream and mashed them by hand. They were delicious.
Tonight, I steamed potatoes, mashed them and added a heaping tablespoon of my homemade cashew nut ‘cream cheese.’ which consists of soaked cashews, coconut milk, lemon juice and salt. It added the desired richness.
I planned to quickly fry up some English spinach. Intending to add as much flavour as possible, I caramelised a chopped onion over a low heat for about 25 minutes while I prepared the potatoes. Then I added a chopped chilli and two cloves of garlic and cooked them for about 10 minutes. I added the chopped spinach and cooked it for about five minutes.
A simple, satisfying, combination. Some times less is more!
