A Dinner That Tastes Great And Is Fun To Eat ... Baked Chips And Chickpea 'Tofu' With Guacamole

I love chips! They are simple to make, filling and they go with EVERYTHING! Potatoes are one of the earth’s most precious gifts!

Tonight I arrived home late and my fresh vegetables vanished after yesterday’s cooking. I go to the markets the day after tomorrow. Sp I used the small amount of what I have left…. one potato, a few slices of chickpea ‘tofu,’ an avocado, some red onion, lime juice, a handful of organic cherry tomatoes and fresh cilantro. I decided to bake the last few slices of chickpea ‘tofu’ in the oven with the chips. In a dry rub of onion and garlic powders, Himalayan pink salt and pepper, I coated the ‘tofu’ slices and lay them next to the chips. After 20 minutes at 180c, I turned over the chips and ‘tofu’ and baked for a further 12 minutes.

While the chips and ‘tofu’ baked, i made the guacamole. Very tasty for minimum effort.
