This morning I wanted some ‘mozzarella' cheese.’ I soaked some cashews and made a new batch ready by noon. I rummaged through my freezer, refrigerator and the counter to put together a meal featuring ‘mozzarella’ for lunch.
I found a bagel in the freezer which i defrosted. I cut half and toasted it under the grill. I sliced ripe tomatoes from the counter. The pesto I found in the refrigerator (without cashew nut ‘parmesan cheese’) perfectly paired with the tomatoes and ‘mozzarella.’ And rich, creamy avocado goes with most things!
